Tofu profumato al curry con zucchine, zenzero e salsa di soia


Oggi inizierò con alcuni cenni storici per raccontare la storia del tofu...
Il tōfu (dal cinese 豆腐, pinyin dòufǔ), talvolta definito anche come caglio di semi (di soia), è un alimento diffuso in quasi tutto l'estremo oriente (Cina, Giappone, Corea, Vietnam, Thailandia, Cambogia). Sebbene il suo nome sia giapponese, ha origini cinesi. Viene ricavato dalla cagliatura del succo ricavato dalla soia e dalla successiva pressatura in blocchi, generalmente di forma rettangolare.

Da un punto di vista alimentare, il tofu ha diverse proprietà e benefici: ha un elevato contenuto di grassi polinsaturi (Omega 3 e 6), contiene poco sale, contiene flavonoidi in grado di proteggere il cuore e di combattere l’azione dei radicali liberi, rallentando quindi il processo d’invecchiamento.

Trovo questo alimento molto versatile: dal dolce al salato si sposa con molti aromi, profumi ed ingredienti. Si possono così creare nuove ricette e sperimentare nuovi piatti.
Oggi voglio proporvi la mia ricetta oriental style!

Ingredienti:
tofu al naturale 125gr
cipolla rossa di tropea 1/2
zucchine 2
curry 1 cucchiaino
zenzero fresco 5gr
rucola 10gr
vino bianco qb
olio evo qb
sale qb
salsa di soia qb
Tabasco qb

Tempo di preparazione: 15 minuti
Facile

Procedimento:

Tagliate a rettangoli di circa 1cm di spessore il tofu, facendo attenzione a non romperlo.
Mettete dell'olio extravergine di oliva in una padella, accendete il fuoco, quindi mettete a soffriggere la cipolla rossa di Tropea tagliata finemente.
Appena la cipolla sarà dorata, versate in padella le zucchine precedentemente tagliate a rondelle, aggiungete il sale, il curry, lo zenzero tagliato finemente, un goccio di acqua e fate rosolare per circa 5 minuti.
Unire il tofu, la salsa di soia, la rucola e fare cuocere per 10 minuti.
Finite la cottura, sfumando con del vino bianco, quindi spegnete il fuoco.
Se amate il piccante, potete aggiungere alcune gocce di Tabasco

Servite in tavola e gustarlo con le bacchette cinesi...delizioso!!!





Fragrant tofu with curry, zucchini, ginger and soy sauce


Today I will start with a brief history to tell the story of tofu ...
Tofu (豆腐 from Chinese, pinyin dòufǔ), sometimes referred to as rennet seeds (soy), is a food spread almost all over the Far East (China, Japan, Korea, Vietnam, Thailand, Cambodia). Though his name is Japanese, has Chinese origins. Is obtained from curdling of the juice derived from soya and by subsequent pressing into blocks, generally rectangular in shape.

From a nutritional point of view, tofu has different properties and benefits: it has a high content of polyunsaturated fatty acids (Omega 3 and 6), contains a little salt, contains flavonoids that can protect the heart and fight the action of free radicals , thus slowing the aging process.

I find this very versatile food: from sweet to savory blends with many flavors, fragrances and ingredients. So you can create new recipes and experiment with new dishes.
Today I want to offer my recipe oriental style!

Ingredients:
natural tofu 125g
red onion 1/2
2 zucchini
1 teaspoon curry
5g fresh ginger
rocket 10gr
white wine to taste
extra virgin olive oil to taste
salt to taste
soy sauce to taste
Tabasco to taste

Preparation time: 15 minutes
Easy

Procedure:

Cut into rectangles of about 1cm thick tofu, being careful not to break it.
Put extra virgin olive oil in a pan, turn the heat, then sauté the red onion finely chopped.
As soon as the onion is golden, pour in the pan zucchini previously sliced, add the salt, curry, ginger, finely chopped, a little water and fry for about 5 minutes.
Add the tofu, soy sauce, arugula and cook for 10 minutes.
Finish cooking, blending with white wine, then turn off the heat.
If you like spicy, you can add a few drops of Tabasco

Serve and eat it with chopsticks ... delicious !!!

Per la festa degli innamorati vi consiglio la mia mousse di tofu con salsa ai frutti rossi da preparare con amore per la vostra dolce metà. Pochi minuti di preparazione, tanto tempo per amarvi!

Ingredienti x 2:
125 gr di tofu al naturale
3 cucchiai di fruttosio
2 cucchiaini di succo di limone

Per la salsa ai frutti rossi:
frutti rossi 50gr
zucchero 50gr

Tempo di esecuzione: 15 minuti
Facile

Procedimento:

Frullare in un mixer da cucina il tofu, il fruttosio, il succo di limone fino ad ottenere una consistenza liscia e cremosa.

Per la salsa:
in una casseruola versare lo zucchero, i frutti rossi precedentemente frullati, portare ad ebollizione fino a raggiungere una consistenza gelatinosa. Lasciare raffreddare.

Versare in una coppa da gelato la crema di tofu ( oppure potete versarla dove più vi piace, io per esempio ho usato una coppa di champagne vintage) e cospargere con la salsa ai frutti rossi.

Sweet VEGlentine!

For Valentine's Day I recommend my tofu mousse with red fruit sauce prepared with love for your sweetheart. A few minutes of preparation, so long time to love you!

Ingredients for 2:
125 grams of natural tofu
3 tablespoons of fructose
2 teaspoons lemon juice

For the red fruits sauce:
red fruits 50gr
sugar 50g

Running time: 15 minutes
easy

procedure:

Blend in a blender tofu, fructose, lemon juice until you get a smooth texture and creamy.

For the sauce:
in a saucepan, pour the sugar, soft fruit smoothies previously, bring to a boil until a gelatinous consistency. Allow to cool.

Pour into a bowl of ice cream tofu (I used a vintage glass of champagne) and sprinkle with red fruit sauce

Spaghetti mediterranei al tofu e pomodorini secchi

Chi non adora gli spaghetti? Sono la tipologia di pasta più' conosciuta al mondo, versatili, si amalgamano perfettamente con gli ingredienti e perfetti per le ricette veloci.
Ho inventato questa ricetta con pochi ingredienti che avevo a disposizione. Volete sapere quali? Ecco la lista...

Ingredienti x 2

Spaghetti cottura 8 minuti 200gr
tofu al naturale 100gr
pomodorini secchi sott'olio 30gr
olive verdi 20gr
capperi al naturale 10gr
latte di soia mezzo bicchiere
amido di mais mezzo cucchiaino
sale qb
olio evo 3 cucchiai
aglio 1 spicchio

Tempo di esecuzione: 15 minuti
Facile

Procedimento:

Su un tagliere tagliare finemente i pomodori secchi, i capperi e le olive verdi. Sbriciolare con le mani il tofu al naturale. In una padella fare soffriggere l'aglio con l'olio, aggiungere il tofu, i pomodorini, le olive e i capperi; mescolare per qualche minuto. Spegnere il fuoco.

Nel frattempo portare ad ebollizione circa 4 litri di acqua in una capiente casseruola, buttare gli spaghetti e cuocerli al dente. 

In un pentolino aggiungere mezzo cucchiaino di amido di mais e versare al suo interno il latte di soia, scaldare, mescolare energicamente fino ad ottenere un composto un po' cremoso.

Dopo aver scolato gli spaghetti accendere il fuoco, versateli nella padella con gli ingredienti,  versare il latte di soia e mescolare bene il tutto. Gli spaghetti sono pronti!





Mediterranean spaghetti with tofu and dried tomatoes

Who does not love the spaghetti? They are the type of pasta more 'known to the world, versatile, blend perfectly with the ingredients and perfect for quick recipes.
I invented this recipe with few ingredients I had available. Want to know what? Here's the list ...

Ingredients 2 x

Spaghetti cooking 8 minutes 200gr
natural tofu 100g
dried tomatoes in oil 30gr
green olives 20gr
capers in brine 10gr
soy milk half glass
corn starch half teaspoon
salt to taste
3 tablespoons extra virgin olive oil
1 clove garlic

Running time: 15 minutes
easy

procedure:

On a cutting board, finely chop the sun-dried tomatoes, capers and green olives. Crumble the tofu with your hands naturally. In a pan fry the garlic with the oil, add the tofu, tomatoes, olives and capers; stir for a few minutes. Turn off the heat.

Meanwhile bring to boil about 4 liters of water in a large saucepan, throw the spaghetti and cook to the tooth.

In a saucepan, add half a teaspoon of cornstarch and pour inside the soy milk, heat, stir vigorously until the mixture is a bit 'creamy.

After draining spaghetti light the fire, pour into the pan with the ingredients, pour the soy milk and mix well. The noodles are ready!
