Vegan Recipes: Risotto al radicchio e zenzero

Oggi voglio preparare un risotto al radicchio. Lo so, forse è un po invernale ma non so rinunciare al suo gusto un po amarognolo che si sposa benissimo con la dolcezza del riso. Per donare freschezza aggiungo un pizzico di zenzero fresco...delizioso!

Ecco gli ingredienti x 2:

1 radicchio
riso carnaroli 200gr
scalogno 1
zenzero fresco circa 2 pezzetti dello spessore di 2mm
vino rosso 1 bicchiere
Olio evo qb
sale qb

Per il brodo:
800ml di acqua
1 cucchiaio di gomasio
1 carota
1 gambo di sedano
un pezzo di zenzero
mezzo cucchiaino di curcuma

Tempo di preparazione: 20 minuti

Procedimento
Per il brodo:immergere nell'acqua tutti gli ingredienti e fare bollire, mantenere il brodo a fiamma bassa.
Nel frattempo in una casseruola, fare soffriggere lo scalogno con l'olio, aggiungere il radicchio, lo zenzero precedentemente tagliato sottile e lasciare cuocere per qualche minuto. Aggiungere il riso, mescolare e quando risulta leggermente tostato versare il vino e sfumare. Lasciare evaporare l'alcol.
A questo punto aggiungere con un mestolo il brodo, lasciare evaporare e continuare il passaggio fino a quando il riso risulta cotto e ben amalgamato.

Il risotto è pronto per essere impiattato!

a piece of ginger
half a teaspoon of turmeric

Proceedings
For the broth: Soak in water all the ingredients and boil, keep the broth over low heat.
Meanwhile, in a saucepan, fry the shallots with the olive oil, add the radicchio, previously thinly sliced ​​ginger and cook for a few minutes. Add the rice, stir and when it is lightly toasted pour the wine and deglaze. Allow the alcohol to evaporate.
At this point add a ladle the broth, let it evaporate and continue the move until the rice is cooked and well blended.

The risotto is ready!
